they are very good. I would skin them out and bread them and fry them up. Nice white meat abut they will jump when they hit the hot grease if they are fresh.

I have eaten them in resturants, just like crawdads

I know some people who skin and eat the whole frog. Like you I only ate the legs. I have seen big bullfrogs whose legs were bigger than chicken legs.

We also ate turtles (both soft shelled and hard shelled) and crayfish (called crawdads around these parts) also fresh water mussels (kinda like oysters). I loved the frogs,turtle, and crayfish....never cared much for the mussels or oysters for that matter
