I have used cheap headphones and expensive headphones and found that not only is the sound quality better, but the more expensive ones kept out surrounding noise better than the cheap phones.. they were also much more comfortable when wearing for long periods of time.
With that being said, like you I have found many coins with the cheap phones and have found deep coins with no headphones at all, but only relying on the external speaker. I think knowing your detector is very important no matter what headphones you use... if you can't analize the signal, better headphones will not help much in my opinion.
