I believe that depending on the metal detector that one uses the quality of the headphones that one uses can make a difference. If your detector just puts out a nondescript ping when the coil passes over a target then cheap headphones will be adequate. However if your detector puts out different tones for each type of metal then one would benefit from having a good quality pair of headphones so that you can hear the difference in the tones. Yes you can miss some targets that are deep and weak due to headphones that are of poor quality. Also the impedance of the headphones can make a difference. Some detectors list the impedance of the headphones that will give the best results. A headphone that has an impedance rating that is too high can also degrade the signal coming from the detector causing those weak signals to be lost.
