I have found a couple of these over the past few months at homes dating from the 1800s. What are they?

Wow! Thanks for posting this guys. I found a bunch of these on a 1800's house site and have been wondering.
 
Good find on the schematic, i don't see a groove in mine though, but it sure is similar
 
They were used for water wells and sewer pumps as the solids would be lifted between the spaced seals....

Yes they are not all exactly the same, depends on what type of seal they had. some had leather seals some had rubber seals. Here is one that has lead center.
