Which camera is the easiest to use and mount to take videos of your hunts. Also, the easiest to post videos/edit videos. Thanks in advance for any help in this matter.
 
The Go Pro Hero 3 has probably the best imaging that can be found in a small camcorder.
There are several models and hundreds of fixtures and fittings so be sure to get the one that will best suit you when you purchase.
Editing?
That's a horse of a different color...editing can take time but done right can be very rewarding.
You will need a good fast computer preferably with a DEDICATED graphics card to allow for HD (high definition) processing.
 
Another great camera is the Kodak ZX5. Its waterproof to 10 feet and shock proof to 5 feet. The ZX5 is the size of a cell phone. Recording time is about 2 1/2 hours on rechargeable battery. Shoots video in 720 and 1080. Check both cameras out and their reviews on YouTube.
 
A little off subject but mentionable, I can't wait for Google Glass to come out, pov shooting,live streaming-so someone anywhere could join in my hunt, and I wont have a camera strapped to my head. It will be exciting...
But back to the main subject,those newer go pros are very nice, the video I have watched that was filmed on them is very crisp.
 
I think I was one of the very first to use a cam to capture the hunt.

One thing you have to remember is your battery life, and the quality of the video. The higher quality the less battery time. If you only hunt for two hours that is fine, I think the Go Pro is rated at about 2 hours run time and by far the best video of all. Me, I like strapping on the cam, Velcro and going out for many hours, I use a old faithful cam I have had for several years, Tachyon XC, it records up to 8 hours on two rechargeable AA, video is very good if it is sunny, shady is fair, vid is 640 x 480. It's 100% water proof, captures the audio of the detector because it is mounted to the headphones. I find a good target I just put my hand in front of and blank out the vid/light to the cam, this makes it a lot easier to edit several hours of video. Also I do like hearing the audio of the detector, after a long hunt it's really hard to recall details and the audio of the detector is very important.

GoPro Hero3 and Final Cut Pro X is what I use. Don't rule out your iphone as a camera either.
 
Another great camera I'm checking out is the ION Pro 3. WiFi capabilities, and you can plug in an external microphone. Waterproof to 48 feet. This will give the Go Pro Hero 3 a run.

I looked seriously at the GoPro3 Black mainly because a few of my friends had one. But as always when I go to buy a product I list all MY PERCEIVED requirements, the specifications of all contenders available and any 3rd party accessories available that I might need. All the hard data goes into a spreadsheet and then search for professional and personal opinions in magazine reviews and on Internet sites. Last year I looked for a camera to replace an older camera that was just not giving me the results that newer cameras offered. As it turned out I always found my selection narrowing to the TOUGH Series of cameras.

My research lead me to the Pentax WG3-GPS. My reasons were:
Waterproof and very rugged
Better overall everyday still photos
Great videos - no Fish-Eye views
Large monitoring screen
GPS Tagging
Unbelievable control over shooting options including underwater still and video settings
1cm Macro Mode with lighting - for very close-up of coins etc.
No need to open case - less chance of getting water into the case via
Eye-Fi connection (Wi-Fi) to transfer files to a computer or tablet or a Cloud Storage
QI Wireless charging
Standard size battery pack - readily available worldwide
Many aftermarket attachments

Down side
too heavy for head mounting (for me at least)
the chest mount I bought does not have a camera tilt feature - shame on me
25 min auto shut-off on video recording mode.(more than enough for me-I have never exceeded the 25 minute shut-off time.)
Auto-focus noise in the video's audio recording. (work-a-round - turn OFF Auto-focus unless you really need it)

and many others...which ever you go for make sure it fits your real needs, not just your perceived ones, you will be much happier with your purchase.
