Can someone please explain true all metal mode as opposed to not true all metal mode?

Type in Monte on search and he does the best explanation. Basically, a true a/m mode not only detects iron but can adjust even lower to match the ground mineralization. Most other a/m modes cannot match certain minute flakes of iron and minerals in extreme ground conditions. This can cause masking that can be largely overcome by a true a/m mode. In "normal" ground, the difference is hardly noticeable. I confine my a/m searches to tot lots where the digging is usually a matter of spreading the bark chips or gravel where the digging is easy and the prospects for gold are high. Expect to find lots of nails, paper clips, hairpins, and nuts and bolts.
 
Maybe you are thinking of a threshold based all metal as opposed to a silent all metal like some Tesoros have...
 
a motion Discriminate mode that simply accepts all metals, ferrous and non-ferrous. That's what the difference is.

All models from Tesoro that have a "true" Threshold-based All metal mode and a 'proper" functional Ground Balance, such as their early Deep Search and Aztec and Mayan VLF/TR-Disc models (the Very Low Frequency mode being the manually GB'ed All Metal mode), or the Inca, Eldorado, Bandido-series, Eldorado
