Hey Walt,
Tokens were used for a lot of different things over the years. One company I used to work for sold token units for parking lots, turnstiles, and parking meters. I know that they were also used for many fairs and game rooms as well as stamp machines and many other vending applications.
I don't know of any books or online references for them, but if you post some pics, I may be able to point you to some sites that would have info on the tokens that you have.
