Signals jumping and videos.

I was just evaluating whether to buy an E-trac or At-pro. I looked at some of the videos and noticed that the signals seem to jump around alot, giving different readings. The Ace 250 videos were okay, but they didn't say anything about the two different noises the pinpointer makes when on certain targets. I saw the silver coin hit on the silver reading, while on my ace 250, only shiny tin cans manage to hit that far right. There's one video where the guy was air testing and using different discrimination. I don't think too many people know just how discrimination works on these detectors. I still have to look at some more at-pro videos, but for now I'll just pile in my finds with my ace 250. I do have the possibility to create a new 3D detector at work, good idea, I just might give it a go.
Could somebody make a generalized video about how metal detectors work, not just on how to find a treasure chest in your own backyard with an excellent "XYZ" brand detector worth $$$$?
 
signals can be jumpy on any detector, a lot it can depend on, the soil, mineral content, nails, junk or any close co-adjacent target..........possibilities are endless.
