Question

If its shallow ie 1/2" - 1" you can pry it out with a screwdriver. If its deeper, you have to find it first. Pinpoint it, find it with a probe, then with your digger cut two semi-circles by forcing the digger into the ground. Next, leave the digger in and flex it backwards and pull up at the same time. A whole somewhat intact plug should come out with your coin in it. Lay the plug on a cloth, remove the coin, return the dirt and plug back to the hole and stamp on it with your shoe.

There are other methods only using a screwdriver, or instead of a digger, use a knife. I'll let someone else talk about these. The purpose is to remove the target without damaging it and to leave the grass like no-one had been there.
 
Like John said or you can use a hunting knife or trowel and cut a round cone shaped plug and lift it out of the ground, remove your coin from the plug or the hole, and place the plug back in the hole and step on it and no one knows you were there.
