I notice the term "recovery speed" is used many times. What does that mean?
SHould I be concerned about it?

It's how fast a machine rebounds from one target to the next. A "fast" rebound helps distinguish targets close together. Very important in areas with high trash content. A factor in how it "seperates" targets, rather than one long sound over close together objects. The faster a machine works in trash,the better IMHO.

I am getting the Ace 250. Would you say this machine has a fast rebound as compared to the other metal detectors?

Fisher F-75 and F-2 are both faster and deeper. Don't have info on other F series by Fisher. I assume they are as well.
