We call this Mexican Chicken Soup :) Got this from my first Pastor's wife...

1 whole chicken cut up
2 cloves chopped garlic
4 or 5 tomatoes, skinned and chopped or canned chopped tomotoes
1 Tablespoon cumin (a must)
Some chopped fresh Jalepeno peppers (1-2)
2 medium onions chopped
1/4 cup chopped fresh cilantro (a must)
Can or two of corn
Some grated Monterey Jack cheese
Fresh chopped avocado
Fresh chopped cilantro
Sour cream
Tortilla chips

OK, this is really easy. Boil the chicken pieces, just like making "normal" chicken soup (this makes the soup base). Add the tomatoes, cumin, Jalepenos, onions, cilantro, and corn and simmer everything until the chicken is cooked and you've got some real nice flavor goin' on in the soup.
When done, put some soup in a bowl with some chicken. Add some chopped avocado and onion, grated cheese and a dollop of sour cream (some more chopped jalepenos if you feel like it) Now take a couple of tortilla chips and break them on top of all that. Finish it off with some fresh chopped cilantro. It's not soup... it's a great winter meal.
 
I bet it would be great with a side of Papa Bears famous salsa & chips! :)
I bet Selperfi would add a few more hot peppers! :lol:
