This recipe is for one of my favorite side dishes...Baked Beans! The thing about this dish, is that it can be adjusted to your taste. If you fix it the way it tells you, it turns out very firey with a sweetness to it too. It makes a large pot.

Ingredients:
1 lb. uncooked bacon - chilled in freezer to allow cutting. Cut its length into thirds and then longways into 1/4" wide strips. (The smaller strips are better!)
2 medium onions, chopped fine
2 garlic cloves, minced
Three 26-ounce cans of your favorite baked beans
1.5 cups chili sauce(the ketchup style sauce)
1/3 cup Worcestershire sauce
1/4 cup yellow mustard
3 tablespoons dried basil or oregano
2 tablespoons dried crushed red chile pepper(or less to taste)
2 teaspoons ground cumin seeds
1/4 to 3/4 cup packed dark brown sugar(more or less to taste)


Preheat the oven to 350 F.
Saute the bacon (medium high heat) in a large skillet until just brown. Add onions and continue to cook until they are translucent. Add garlic and cook for 2-3 minutes longer. Scrape mixture into a large baking dish and add the rest of the ingredients. Adjust the red pepper and sugar to your taste. Cook uncovered until bubbly, 40 to 45 minutes. The edge will start to crust when done. Serve hot. Make fantastic leftovers too!
