At first I was concerned because of the EMI, but I'm assuming because of the spot you were detecting, that's why it was so choppy?
I also watched his video and, to me, what I heard was EMI noise. I run all of my Regular-Use Detectors at or very close to Max Gain, reducing it the EMI 'noise' is too excessive. I often search more-or-less with the Gain / Sensitivity 'on-the-edge' so it can get a little sputtery. However, it can be controlled with the Impact's options of operating Frequency, Gain, Disc. level, iSAT and search mode.

The Gen D mode really seemed to show how much iron you were detecting in and it picked out that rivot pretty nicely
That was a bigger-size half of a rivet, and many/most of those rivets I find are made of brass or copper and not iron. Every detector I use, and I mean
every, finds me the much smaller-size little rivets and at surprising depths. Mind you I mainly Relic Hunt and most of those old-use locations can have a lot of rivets and other smaller objects in hiding. I use smaller-size coils most of the time, then opt for a mid-size coil in low-to-moderately littered places, and I really enjoy my Impact and 4X7¾ DD coil.
I was late getting this reply finished as I was dealing with a family matter, and since I have noticed that you have placed at order for a new Nokta Impact. I will guarantee you that once you use it and learn it, the Impact is quite likely to be one of the top-two detectors you would care to travel with. It works very well with the standard 7X11 DD coil and is the second most comfortable TID model in my carry battery for long-day searches. I hope you ordered it in the Pro Pack to get the smaller 4X7¾ DD coil, and if not you might want to put that coil at the top of your accessory order list.
