Minelab Sovereign Elite Sensitivity settings

The question I have is Once I click it out of auto it goes into manual mode. I saw where someone said that just click it lightly out of auto and leave it there but I find that it is to sensitive. Where would it be best to set the sensitivity level?
 
Then 12 if 11 is too sensitive. I have hunted with sens at 1 O'clock and still had plenty of targets. I can hunt most local beaches here at 10 O' Clock
