Cajun pantry items in a typical Acadiana (southwest Louisiana) kitchen are really quite simple. But they may not look quite like yours. The "important" stuff consists of:

Salt
Cayenne pepper
Black pepper (it's, of course, always best to use black peppercorns and grind them as you cook, but corse ground pepper in a can works well enough)
Garlic powder
Bay leaves
