I have MXT coils that are not V rated will they work on the VX3 in all 3 freqences?

They should work OK but they are not nulled (tuned) for the 22.5 kHz channel for the best performance. Some coils are better nulled than others.
 
Usually not, 22.5 is best for detecting smaller gold jewelry and nuggets. As you will find out using three frequency mode, lower conductor targets like nickels and gold will hit hardest on 22.5 and most of the other coins, especially silver hits hardest on 2.5. Indian head cents, tokens and the like will often hit hardest on 7.5. The three frequency mode will come in real handy identifying targets, like if you get a quarter VDI but the strongest frequency is 22.5, it is most likely a screw cap and not a quarter. Quarters will be strongest in 2.5. There are a lot of little hints that you will pick up as you learn the V. Much of this you can find in past posts.
