Homemade Hot-Smoked Salmon, LARGE pic...

My GM brought in a LOT of salmon that he caught up in Manistique, MI, and gave it to the employees. I grabbed quite a bit, probably 15 pounds or so. We were eating salmon all weekend. Here's a photo of the Hot-Smoked Salmon that I made Monday night for dinner. I only cooked it about 25 minutes, just to give it a nice, light, smokey flavor and to fully cook the fish. My other half, Laurie, wasn't to thrilled with it, but since she hadn't eaten anything that day, downed 3 pieces. My oldest step-son, Stephen, had two that night, and finished off the leftovers the next day.

Laurie did like the blackened salmon I did Sunday night, and she has told me to make more of the salmon patties that I did for lunch on Monday. I guess she now agrees with me that her mother's salmon patties aren't the best thing in the world.

I can't really afford the gas to drive that far to get them. Otherwise, I'd stock my freezer for my family. The kids seemed to love it.

bought it at Lowe's last year. You're right, it's huge! 800 sq. in. of cooking space, if you include the top rack (you can see that I'm using it in that pic). I want to get the side-mounted firebox for it, so I can use the entire cooking area to smoke food. I could do a couple small turkeys at one time then.
