Just curious, what film camera do you use for your business? F5 or medium format?
 
Actually both.
I have 2 F5's and an F100 for the 35mm stuff.
I have 4 Mamiya 645 medium format cameras.
 
I sure miss my camera's! Had an Rb67, 645s hasselblad, c330, f3hp, Fe2, FM, a full studio with darkroom and a background projection system. I havn't until recently became interested in photography again.
In you're opinion and I know you will understand this"
What digital camera will allow "me" to controll the shot just as I wish for it to be seen?
ie lighting and exposure and everything in between? Fully manual?

If it's fit's your budget.......
Or look into the the Nikon 5000
The 5000 is a consumer grade D-camera so you might be limited in what you want to do.
