[attachment 219182 jan2.jpg] Blackeyed Peas with ham hock and chunks of ham on the stove top.

[attachment 219183 jan3.jpg] Cornbread fresh out of the oven after about 30 minutes at 350 degrees. White rice is ready at the same time.

[attachment 219184 jan4.jpg] Finished product. Lots of butter for the cornbread and some hot pepper sauce (vinegar based) for the peas and rice.

I promise you'll still be pattin' your foot after the second plateful !

It was a 10 room unit and Dad bought it for the land, not to continue running a roadside motel. BUT, until he could secure the financing necessary to build the warehouse complex that he'd envisioned, we still rented rooms and I did everything from front desk clerk to maid service. When we were really busy we had help from a black Lady named Alberta. Alberta was a Gem !! I would have to pick her up and drop her off but she was a great person. Worked hard and I appreciated her help around the old place, lessened some of the load off of my family. Alberta had a Garden and one day she brought us an old Mayonnaise jar with her home made pepper sauce in it. Let me tell you, it would light you UP but in a good way! Every time we had any kind of peas, beans or chili, we'd dig out that old mayo jar from the back shelf of the refrigerator and it was always the perfect additional to spice up whatever you wanted to add a little kick to. Can't find anything like it in the stores and I do miss her and her home made pepper sauce. Would of loved to have had some today.
