Happened to look out the window and spot this iguana walking down the seawall toward our boat. Near as I can figure he's about 36 to 42 inches long .... and the "baby" of the other two I've seen in my neighbors yard.

OK, how would you cook it ... and what would it taste like ...?

garlic, 2 ribs of celery, chopped, 1/2 pound of sliced carrots, 1 bay leaf, 3 medium potatoes, diced, 1 cup of frozen green peas, 1/2 cup uncooked rice or 1 to 2 cups fine uncooked noodles, 4 peppercorns, 1 1/2 teaspoons of salt, 2 quarts of water and 8 beef bouillion cubes.

Let it cook all day slow, 10 to 12 hours, serve with a toss salad with Honey & Bacon dressing along with a loft of Italian bread with melted butter then top it off with a good bottle of red wine, a cabernet sauvignon!

Boca Grand Island is over run with them. They are seeking federal funds to rid the island of them. They have many many thousands of them.
