How do the experienced detectorists tell if they are at a "good" site? and why?
 
Well for the most part, it's good to know that a site has been used for 100 - 200 (or more) years or so (research).
Try to find out by research, or just looking, if it's been relandscaped ... usually the less changes over the years the better.
Then try some detecting ... often you can tell by digging a few deep holes if the soil has been disturbed or if there's been fill added, etc. Also the number, quantity and types of signals and retrieved targets helps ... old versus new.
Of course, old coins, etc are the best indicator that you've found a good site but also be on the lookout for old broken china, bricks, etc which can be remnants of earlier times. Lots of modern junk and garbage can be a clue to possibly look for another site where the probablity of older finds is better. No sense wasting your time finding tons of modern pennies when you really want old coins. Of course, if you just want to enjoy the outdoors and exercise then finding any type of target might be just fine.
These are just a few of the things that come to mind.
That being said ... hunt as often and as long as you can at whatever sites you can because treasure can be found almost anywhere.
