Looks like part of an exhaust manifold gasket. The metal ring around the inside... Is the rest paper, metal or graphite?

The way it is buckled, I believe it used to be round. I don't think head gasket, but your first thought is right: exhaust flange gasket.
The other item? I would like to see photos of the other side.
