Both are great detectors, but the GT seems to be a bit more sensitive and is the best Sovereign ever made in my opinion. Like it was mentioned the iron mask can be turned off on the GT while the Elite you can not which will help on false signals off iron, but with it off it can not see the close good targets close to iron either. With the GT you also have ground tracking that only works in all metal and does not effect the disc mode which help those that want to use it for prospecting. On the GT they added a toggle switch for silent search so you can use it when you want to and then go back to threshold instead of taking the detector apart to do this. Some run it in silent search all the time while some never use it and it is rare I use silent search, but nice to have if I needed it.
Any of the Sovereigns are a great detector and good to start with, but the GT is more of a professional detector to get the little extra depth and ID out of it as its ID is better at deeper targets than the others, It does seem to false a little more on iron with the iron mask on, but I feel that is because it is a little more sensitive.

With the Iron mask off on the GT, does the Sov GT null on iron nails? I need to dig them up to unmask deeper good finds.
Also is the GT much lighter than the Sov XS Pro that I still use? Is the shaft similar? 180 meter?

Good to see you post again on the BBS forum.
On the iron mask with it on will null less then when it is off the way I understand it. When on it may false more on iron, but also can get a signal on a coin that is close to the iron. Off it will not false and also will not signal of a coin close to iron, so the way I look at it then is it will null even more with it off then when you have it on.
The straight shaft with the handle that comes with the GT you can adjust does help with the weight problem, but still a bit heavy if you add a meter and a SunRay S-1 Probe. The new 10 inch Tornado coil that comes on it is lighter too and it is the first Minelab coil I have liked since the 8 inch Coinsearch. Minelab does make a 180 meter since the GT came out and we find it works better than any meter Minelab has had for the Sovereigns.
I Have a GT I use as everyone should know by now I like my Sovereigns and I run that stock 10 inch Tornado coil most everywhere and still have a Sun Ray DTI 3 meter plus my S-1 probe and find it is a bit more sensitive than any of the other Sovereigns. I also had a Explorer SE Pro and now a E-Track which I use plus a F-75 so the GT dont get used as much as it used to, but still one I keep to use when I can as i do like the tones and the ID, plus the finds I can find with it.
It is hard to find a detector that can see though iron trash, but this new E-Trac has been finding some coins in with nails we all missed over the years. Thought it was just me, but been seeing on the E-Trac forum others are seeing this too.

I feel the depth on the GT is better than any of the Sovereigns, but would recommend a earlier Sovereign to learn on and get a GT once you get to know the Sovereign well. The GT has more controls which everyone like to mess with and dont know what they do, the older Sovereigns have less and easier to use as the GT is more sensitive and it will false a bit more which makes the learning curve harder.
For a person that is new to the Sovereigns and wants to learn one a XS or XS2 followed by the XS2a and if you could find a 8 inch coinsearch coil and a good 180 meter would be the best setup in my book and after you get to know it well and want to go to the next step the GT is the best.
