What does the high and low adjustment located behind the meter mean.

It's to adust your meter to be accurate to the targets described on the front of the meter. Set your machine up properly and then put a quarter down on the ground (in clean ground, no other metal) then swing the coil over the quarter and use that adjustment knob to get the meter to read 180.
