Cornbread recipe part 2...........

[attachment 219596 recipe6.jpg] After 30 minutes your cornbread should be done BUT it will be a little "light" colored on the top so here's what you do.........

[attachment 219597 recipe7.jpg] Take it out of the oven (turn the broiler back on) and add a "dollop" of butter right to the top of it and smear it around with the wooden spoon, covering the entire top. Now this is also Very important, when you put the cornbread back into the oven you'll need to peek at it every minute or so. The broiler will darken the top very quickly and 30 seconds can make the difference between a perfect pan of cornbread or ruin it. Shouldn't take more than 2 or 3 minutes depending on your preference.

[attachment 219598 recipe8.jpg] This is the final results. Cut in squares, liberally apply butter and enjoy. Left over cornbread can be covered in saran wrap (clear plastic wrap) and just left on top of the stove over night or until it's gone. We'll cut a piece off in the morning and put it in the microwave, add butter and it's better than biscuits.

There are a TON of modification to dress up any cornbread recipe. One of my favorites is to chop up some jalapeno peppers, stiffen up the batter just a bit so the chopped peppers won't sink to the bottom of the pan and it's AWESOME. Some people will also add a pinch of baking soda as well but I never have. If anyone makes this recipe, I'd love to hear about your results. Good luck and good eatin' !
